WHere is a simplified interpretation of a beverage found on a new cocktail list. This is a large-volume pre-mixed that's packed with the flavours of a festive period, rendering it ideal for your holiday party. Any leftover syrup to use in breakfast cocktails, sweets, or to mix another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put every ingredients in a saucepan, bring to a light boil, agitating to dissolve. Next, turn off the heat and leave to reach room temperature fully. Transfer to a sealable bottle, close it keeping it chilled, it can be stored for about a month.
To make Premix: Mix all the spirits and syrup into one sizeable container, allow it to infuse for one hour, then strain best through a fine cloth, to ensure it's fully clarified.
For serving: Pour 85ml of your batch mix to a mixing glass filled with ice, and stir gently for about 60 seconds to cool it down. Filter into an frosted cocktail glass or similar, decorate with some cranberries and finish by giving it a brief mist with the mandarin essence above the glass.
